Pumpkin Spice Cookie Recipe 2-1/2 c. all-purpose flour
1/2 t. baking soda
1/4 t. salt
2 t. pumpkin pie spice
1 c. (packed) dark brown sugar
1/2 c. granulated sugar
1-1/2 sticks (1/4 c.) salted butter, softened
1 large egg
1 c. pumpkin (canned or freshly cooked)
1 t. vanilla extract
6 oz. raisins (about 1 cup) – Optional
2 oz. walnuts, chopped (about 1/2 cup) - Optional
(instead of pumpkin pie spice use: 2 t. cinnamon, 1 t. allspice, 1
t. nutmeg)
- Preheat oven to 300 degrees
- In a medium bowl, combine flour, soda, salt, and pumpkin pie
spice. Mix well with a wire whisk and set aside.
- In a large bowl, blend sugars with an electric mixer set at
medium speed. Add the butter and beat to form a grainy paste.
Scrape sides of bowl, then add egg, pumpkin, and vanilla. Beat
at medium speed until light and fluffy.
- Add the flour mixture (and raisins and walnuts if using). Blend
at low speed just until combined. Do not overmix.
- Drop by rounded tablespoons onto ungreased cookie sheets,
1-1/2 inches apart. Bake 23-24 minutes until cookies are slightly
brown along edges. Immediately transfer cookies with a spatula
to a cool, flat surface.

founder's
deep concern that people were becoming disconnected from the
land
and the role of healthy agriculture in their modern lives. In 1989,
Michel Kidder purchased the land and facilities to begin
developing
educational programs. And, in 1994 Stonewall Farm received its
501(c)(3),
not-for profit status for the present organization that is made
up of approximately 170-acres of working farm and education
center
land. The mission of the organization is "to cultivate a
long-lasting
commitment to sustainable agriculture and environmental
practices".
The programs we offer have become something the students
can look
forward to and learn to value the present by respecting the past.

Education Staff
Marci Birkes, Education Director
Marci comes from northern Michigan where she directed an
outdoor education program for a land conservation organization.
She has degrees in both education and outdoor recreation and
15 years experience in outdoor education, summer camps, farm
education and team building. She is looking forward to
strengthening Stonewall’s relationship with area schools and
expanding existing programs to generate a greater diversity of
topics and students.
Barb Desroches – Camp Director/ Instructor
Barb Desroches was brought on board this summer as the new Summer Camp Director, and is also a full-time educator for the school field trip programs at the farm. Barb is a native of Bethlehem, New Hampshire, and has a Bachelor’s degree in Environmental Science from Lyndon State College in Lyndonville, Vermont. Last May, Barb received a Master’s in Environmental Studies with a concentration in Environmental Education from Antioch New England Graduate School in Keene. Her passions are preserving wildlife and habitats and local sustainable agriculture, and teaching through music and song. Barb is also a singer/song writer, mother and grandmother.
