Oatmeal Raisin Cookies
Yield: 50 cookies
Ingredients:
• Whisk together and set aside
• 2 7/8 cups all-purpose flour
• 1 ½ teaspoons baking soda
• 1 ½ teaspoons baking powder
• 1 ½ teaspoons salt
Directions:
• Cream wet ingredients
• 1 ½ cups unsalted butter, softened
• 1 ½ cups sugar
• 1 ½ cups dark brown sugar
• 3 eggs
• 3 teaspoons vanilla
Then stir in
• 4¼ cups oats (not instant)
• 2 cups raisins
• Preheat over to 350 degrees. Whisk dry ingredients; set aside.
• Combine wet ingredients with a hand mixer on low. To cream, increase speed to high and beat until fluffy and the color lightens.
• Stir the flour mixture into the creamed mixture until no flour is visible. Add the oats and raisins, and stir. Drop by tablespoons onto baking sheet sprayed with nonstick spray. Bake 11-13 minutes until golden.
• Remove from over; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.
