Pumpkin Spice Cookies
Ingredients:
• 2-1/2 c. all-purpose flour
• 1/2 t. baking soda
• 1/4 t. salt
• 2 t. pumpkin pie spice
• 1 c. (packed) dark brown sugar
• 1/2 c. granulated sugar
• 1/2 stick (1/4 c.) salted butter, softened
• 1 large egg
• 1 c. pumpkin (canned or freshly cooked)
• 1 t. vanilla extract
• 6 oz. raisins (about 1 cup) – Optional
• 2 oz. walnuts, chopped (about 1/2 cup) - Optional
(instead of pumpkin pie spice use: 2 t. cinnamon, 1 t. allspice, 1 t. nutmeg)
Directions:
• Preheat oven to 300 degrees
• In a medium bowl, combine flour, soda, salt, and pumpkin pie spice. Mix well with a wire whisk and set aside.
• In a large bowl, blend sugars with an electric mixer set at medium speed. Add the butter and beat to form a grainy paste. Scrape sides of bowl, then add egg, pumpkin, and vanilla. Beat at medium speed until light and fluffy.
• Add the flour mixture (and raisins and walnuts if using). Blend at low speed just until combined. Do not overmix.
• Drop by rounded tablespoons onto ungreased cookie sheets, 1-1/2 inches apart. Bake 23-24 minutes until cookies are slightly brown along edges. Immediately transfer cookies with a spatula to a cool, flat surface.
