Turkey Wraps
Yield: 10, 1 wrap per serving
Ingredients:
• Whole Wheat tortilla wraps, 10 each
• Turkey breast, frozen 1 lb.
• Gruyere Cheese, sliced 20 slices
• Peppers, bell, green, chopped 1 each
• Onions, red, chopped ½ each
• Mushrooms, chopped 10 each
• Oil, vegetable, as needed
• Poultry seasoning, as needed
• Other fresh herbs, as needed
Directions:
• Thaw out the turkey breast, cover generously with herbs and spices. Bake at 325 degrees for about 30 minutes or until center is no longer pink and internal meat thermometer reads 165 degrees. Cool and chill turkey.
• Once turkey has reached a temperature below 40 degrees, slice into strips and set aside.
• While turkey strips are chilling, sauté the peppers, onions and mushrooms until tender.
• Completely cool the vegetables once sautéed.
• While vegetables are cooling lay out the tortillas and cover with 2 slices of gruyere cheese.
• Spread about ¼ cup of mixed vegetables over each cheese-laden tortilla.
• Please about 2 oz. of turkey over each tortilla, then grill for about 3 minutes until center is warm.
